Roasted Racks of Lamb with Garlic and Herb Crust
1 head of garlic
1 sprig of rosemary
1/4 cup extra-virgin olive oil
2 racks of lamb
Salt and pepper, to taste
In a food processor, combine the garlic, rosemary, and olive oil, and process until rosemary and garlic are minced. Season racks with salt and pepper and rub the garlic mixture all over them. Place the racks on a large rimmed baking sheet and let them marinate for 1 hour.
Preheat the oven to 450 degrees F. Roast the lamb in the upper portion of the stove for 15 minutes. Turn the racks and roast for 10 minutes longer or until the meat is medium-rare. Transfer the rack to a carving board and let them rest for 10 minutes.
Carve the racks between the rib chops, transfer to plates, and serve.
