1 pound lamb kabob meat

2 tablespoons olive oil

Juice of one lemon

Lemon zest

4 cloves of garlic, minced

Fresh peaches, cut into chunks

Salt to taste

Grilled vegetables, such as zucchini spears

Directions

For the marinade, combine the olive oil, lemon juice and zest, minced garlic, and salt in a large mixing bowl. Add the cubes of lamb meat and mix well. Cover the bowl and refrigerate for at least one hour or overnight.

When ready to grill, preheat the grill to medium-high heat. Slide the cubes of lamb onto skewers, alternating with peach chunks. Grill the kabobs for 8–12 minutes, turning occasionally, until the lamb is cooked to medium rare.
